Easy Apple Crumble Muffins Recipe

Soft apple muffins with a crunchy crumble topping

These apple crumble muffins bring together two favourites in one easy bake. They are soft and lightly spiced inside, with small pieces of apple throughout and a buttery crumble topping. They are lovely served slightly warm and make an easy after-school treat or weekend bake with the children.

Ingredients

For the muffins

  • 250g self-raising flour

  • 1 teaspoon ground cinnamon

  • 100g light brown sugar

  • 2 medium apples

  • 2 large eggs

  • 125ml milk

  • 100g unsalted butter, melted and slightly cooled

  • 1 teaspoon vanilla extract

For the crumble topping

  • 50g plain flour

  • 30g unsalted butter, cold and cut into small cubes

  • 25g light brown sugar

  • ½ teaspoon ground cinnamon

You will need

  • 12-hole muffin tin

  • 12 muffin cases

  • 2 mixing bowls

  • Wooden spoon or spatula

  • Grater or knife

Method

  1. Heat the oven to 180°C/160°C fan/gas 4 and line a 12-hole muffin tin with cases.

  2. Make the crumble topping first. Put the plain flour and cold butter into a small bowl. Rub them together with your fingertips until the mixture looks like breadcrumbs.

  3. Stir in the brown sugar and cinnamon, then set aside.

  4. Put the self-raising flour, cinnamon and brown sugar into a large bowl and mix together.

  5. Peel and core the apples. Coarsely grate one apple and cut the other into small cubes.

  6. In a separate bowl or jug, whisk together the eggs, milk, melted butter and vanilla.

  7. Pour the wet ingredients into the dry ingredients. Add the apple and gently fold everything together until just combined. Try not to overmix—the batter does not need to be completely smooth.

  8. Divide the mixture evenly between the muffin cases and sprinkle the crumble topping over each one.

  9. Bake for 22–25 minutes, until golden and a skewer inserted into the middle comes out clean.

  10. Leave the muffins in the tin for 5 minutes, then transfer them to a wire rack. They are especially good served slightly warm.

Top tips

  • Cutting one apple into small cubes gives the muffins little pockets of apple, while the grated apple keeps them soft.

  • Children can help weigh the ingredients, rub together the crumble topping and fill the cases.

  • Store in an airtight container for up to 2 days, or freeze for up to 1 month.
