Hello bakers! Summer is officially on the horizon, and while we absolutely adore turning the oven on, sometimes it’s just a bit too warm for baking. Don't worry though, because we have the absoluteĀ ultimate sunny-day treat that will keep your little ones entertained without a single baking tray in sight!

We are completely obsessed with this brilliant, mess-free Ice Cream Biscuit Sandwich hack. By using a clever little trick to slice your ice cream, you get perfectly neat discs ready to pop straight between two classic British digestives. It is wonderfully tactile, incredibly fast, and a total dream for kids who love getting creative with sprinkles.

Ingredients

  • 1 packet of digestive biscuits (chocolate-covered ones work beautifully too!)

  • 1 cardboard tub/pint of your family’s favourite ice cream (Cookie Dough or Vanilla fudge work perfectly)

  • 1 wide bowl filled to the brim with multi-coloured rainbow sprinkles, stars, or chocolate strands

Method

  1. Set up the sprinkle station: Get your little helpers to lay out the digestive biscuits on a clean plate or chopping board, flat side facing up. Pour your vibrant sprinkles into a shallow, wide bowl so there's plenty of room for rolling.

  2. The magic slicing hack (Adults only!): Take your tub of ice cream straight from the freezer. Using a sharp, serrated bread knife, slice horizontally straight through the cardboard packaging and the ice cream to create perfect, round discs (about 2cm thick).

  3. Peel and pop: Hand the ice cream discs over to the kids. Show them how to gently peel away the outer cardboard ring from their ice cream slice, it comes away so easily!

  4. The sandwich squeeze: Place the ice cream disc directly onto one digestive biscuit, then top it with a second biscuit. Give it a gentle, loving squeeze together so the ice cream pushes out just slightly to the edges.

  5. Roll in the fun: Now for the best part! Roll the exposed edges of the ice cream sandwich around in the bowl of sprinkles until it’s beautifully coated in a sparkling rainbow ring.

Serving Suggestions

These are best enjoyed immediately out in the garden while the sun is shining! Keep a few napkins or wet wipes nearby, as little fingers will definitely get beautifully sticky. If you want to make a proper summer party dessert out of it, serve them alongside a few fresh British strawberries or raspberries.

Storage Tips

If you aren't eating them straight away, you can absolutely wrap each finished biscuit sandwich individually in a bit of baking parchment or cling film. Pop them back into the freezer in a container, and they will keep perfectly for up to 2 weeks, making them the ultimate grab-and-go sweet treat for unexpected sunny afternoons!
