This is the perfect recipe for little hands to get messy with, and the best part? It's almost impossible to mess up, and it tastes absolutely divine.
Rocky Road is a beloved British traybake for a reason. It's chunky, chocolatey, chewy, and crunchy all at once. What's not to love? It's a fantastic way to use up leftover biscuits, and you can truly make it your own. Let's get mixing!
Ingredients:

200g Digestive biscuits (rich tea or even cookies work too!)

135g butter, cubed

200g dark chocolate (around 70% cocoa is great), broken into chunks

2-3 tbsp golden syrup

100g mini marshmallows

Method:

Prep the Tin: Line an 18cm (7 inch) square baking tin with baking parchment, leaving a bit overhanging to make it easy to lift the Rocky Road out later.

Bash the Biscuits: This is the most fun part for the kids! Put the Digestive biscuits into a large freezer bag, seal it, and let them gently bash them with a rolling pin. You're not aiming for crumbs; you want a lovely mixture of small chunks and fine dust.

The Melt (Adult Supervision Needed!): In a large, heatproof bowl set over a pan of gently simmering water (don't let the bowl touch the water!), add the butter, dark chocolate, and golden syrup. Stir occasionally until everything is beautifully melted, smooth, and glossy. Remove from the heat.

The Big Mix: Pour the bashed biscuits, mini marshmallows, and any extra yummy bits (sultanas, cherries, etc.) into the bowl with the chocolate mixture.
