These adorable cookies are perfect for a cozy Christmas afternoon, or a fun baking activity for Christmas eve. Not only do they look the part with their red-and-white "Santa hats," but they’re also irresistibly tasty.

Here’s how you can make your own:

Santa Hat Biscuits Recipe

Prep Time: 20 minutes
Cook Time: 12-15 minutes
Serves: 20 biscuits


Ingredients

⭐️ 200g Butter (unsalted, softened)
⭐️ 200g Caster Sugar
⭐️ 320g Plain White Flour
⭐️ 1 Egg (medium)
⭐️ 1 tsp Vanilla Extract
⭐️ 0.5 tsp Baking Powder
⭐️ 50g Raspberry Jam
⭐️ 60g Icing Sugar


Method

  1. Prepare the Baking Tray and Oven:
    Preheat your oven to 180°C (fan 160°C/gas mark 4). Line two large baking trays with non-stick baking parchment.

  2. Make the Dough:
    In a large mixing bowl, beat together the softened butter, sugar, and vanilla extract until pale and fluffy.
    Add the beaten egg and mix until fully combined.

  3. Form the Dough:
    Gradually add the flour, baking powder, and a pinch of salt. Mix until a soft dough forms.

  4. Shape the Biscuits:
    Roll out the dough onto a lightly floured surface to about ¼ inch thickness.
    Use a round cookie cutter or the rim of a glass to cut out the biscuit shapes and place them on the baking trays, leaving enough space for spreading.

  5. Create the Hat Indentation:
    Using the handle of a knife, gently press the center of each biscuit to create a triangular hollow, mimicking a hat’s shape.

  6. Fill with Jam:
    Spoon about ½ tsp of raspberry jam into the hollow of each biscuit, filling it completely.

  7. Bake:
    Place the trays in the oven and bake for 12-15 minutes, until the edges are just lightly colored.
    Allow the biscuits to cool on the tray for a few minutes, then transfer them to a wire rack to cool completely.

  8. Decorate:
    Mix the icing sugar with 2 tablespoons of milk or water to create a smooth icing. Transfer the icing to a piping bag and cut a small hole at the tip.
    Pipe the "bobble" at the top of the hat and a line of icing at the base for the rim. Alternatively, use a white icing pen for added ease.
