Easy Lemon Drizzle Tray Bake Recipe for Kids

This Lemon Drizzle Tray Bake is a simple recipe that's perfect for baking with children. Made with everyday ingredients and topped with a tangy lemon drizzle, it's an easy bake that's ideal for weekends, school holidays or whenever you're looking for a fun activity to do together.

🍋 Ingredients

For the sponge

  • 225g self-raising flour

  • 225g caster sugar

  • 225g softened butter

  • 4 medium eggs

  • Zest of 2 lemons

For the drizzle

  • Juice of 2 lemons

  • 100g icing sugar

🍋 Method

  1. Preheat your oven to 180°C (160°C fan) and line a tray bake tin with baking paper.

  2. Add the flour, sugar, butter, eggs and lemon zest to a large mixing bowl.

  3. Mix until smooth and combined.

  4. Pour the mixture into the prepared tin and spread evenly.

  5. Bake for 25–30 minutes until golden and springy to the touch.

  6. While the cake is baking, mix the lemon juice and icing sugar together to make the drizzle.

  7. Once baked, carefully prick the warm cake all over with a skewer or fork.

  8. Slowly spoon the lemon drizzle over the cake, allowing it to soak in.

  9. Leave to cool completely before cutting into squares.
