Picnic Pizza Pinwheels – The Perfect Summer Snack

When the sun comes out, simple food is often the best. Whether you're heading to the park, the beach or enjoying lunch in the garden, these Picnic Pizza Pinwheels are an easy recipe that's always a hit.

They have all the flavours of a classic pizza wrapped up in light, flaky pastry, making them easy to eat without any fuss. Better still, they're delicious served warm or cold, so they're ideal for making ahead before a family day out.

One of the best things about this recipe is how easy it is to customise. Let everyone choose their favourite toppings, from pepperoni and ham to sweetcorn, peppers or olives. Children love helping spread the sauce, sprinkle on the cheese and roll up the pastry before slicing it into pinwheels.

Serve them alongside fresh fruit, crunchy vegetable sticks and a homemade dip for a picnic everyone will look forward to.

Ingredients

  • 1 sheet ready-rolled puff pastry
  • 4 tbsp tomato pizza sauce or passata
  • 150g grated mozzarella
  • 50g grated cheddar
  • 40g sliced pepperoni (optional)
  • 1 tsp dried oregano
  • 1 tsp mixed herbs
  • 1 egg, beaten (for glazing)

Method

  1. Preheat your oven to 200°C (180°C fan) and line a baking tray with baking paper.
  2. Unroll the puff pastry onto a work surface.
  3. Spread the tomato sauce evenly over the pastry, leaving a 1cm border around the edges.
  4. Sprinkle over the mozzarella, cheddar and herbs. Add the pepperoni if using.
  5. Starting from one long edge, tightly roll the pastry into a log.
  6. Slice into 2cm rounds and place onto the prepared baking tray, leaving a little space between each one.
  7. Brush the tops with beaten egg.
  8. Bake for 15–20 minutes until the pastry is golden, crisp and the cheese is bubbling.
  9. Leave to cool slightly before serving. They're just as tasty cold, making them perfect for picnics.

Top Tips

  • Add sweetcorn, diced peppers or cooked mushrooms for extra flavour.
  • Make a vegetarian version by leaving out the pepperoni.
  • Pack them with cherry tomatoes, cucumber sticks and fruit for an easy picnic lunch.
  • Store in an airtight container for up to 2 days.
