Hello there, busy parents! There's one dessert that just screams "British comfort food" and that’s a sticky toffee pudding. Warm, gooey, and utterly delicious, it's the perfect way to wrap up a Sunday roast or treat the family on a rainy day.

The best part? This recipe is deceptively simple and a fantastic way to get the kids helping in the kitchen. Measuring out the dates, stirring the sauce – it's all part of the fun! And let's face it, the anticipation as it bakes is pretty exciting, too.

Ingredients

For the Pudding:

  • 175g Pitted Dates

  • 175ml Boiling Water

  • 1 tsp Bicarbonate of Soda

  • 75g Unsalted Butter (softened)

  • 175g Dark Muscovado Sugar

  • 2 Large Eggs

  • 175g Self-Raising Flour

  • 1 tsp Baking Powder

For the Sticky Toffee Sauce:

  • 150g Light Muscovado Sugar

  • 50g Unsalted Butter

  • 150ml Double Cream

Method

  1. Prep Time! First, preheat your oven to 180°C (or 160°C for fan ovens, Gas Mark 4). Grease a 20-22cm square baking tin or a roughly 2-litre ovenproof dish with a little butter.

  2. Date Time: Pop your pitted dates and bicarbonate of soda into a bowl. Pour over the boiling water and leave to sit for about 10 minutes until the dates are nice and soft.

  3. Mash & Mush (The fun part for kids!): Using a fork, mash the softened dates into a paste. It doesn't need to be perfectly smooth – a few lumps are fine!

  4. Get Mixing: In a large bowl (or using a food processor if you prefer), cream together the butter and dark muscovado sugar until pale and fluffy. This is a great chance for little hands to get involved with the electric whisk (with supervision, of course!).

  5. Egg-cellent Addition: Whisk in the eggs, one at a time, adding a tablespoon of flour with the second egg to stop the mixture from curdling.

  6. Fold it In: Gently fold in the rest of the self-raising flour and baking powder. Finally, carefully stir in your prepared date mixture.

  7. Bake Away: Pour the lovely, gooey batter into your prepared tin and level the top. Bake for 35-40 minutes, or until the pudding is risen and springs back when lightly touched in the centre.

  8. Sauce it Up: While the pudding is baking, it's time to make that incredible sauce! Put the light muscovado sugar, butter, and double cream into a small saucepan. Heat gently until the butter has melted and the sugar dissolved.

  9. Bubble & Gurgle: Bring the sauce to a gentle simmer, stirring constantly, and cook for about 2-3 minutes until it's slightly thickened and a beautiful, rich toffee colour.

  10. The Grand Finale: Once the pudding is out of the oven, use a skewer to poke holes all over the surface. Pour about half of your warm toffee sauce over the top, letting it soak deep into the pudding.

  11. Serving Up: Serve warm in big slices, with the remaining toffee sauce drizzled generously over each portion.

A sticky toffee pudding is amazing on its own, but here are some popular accompaniments:

  • Custard: Warm, vanilla-infused custard is a classic choice!

  • Ice Cream: A big scoop of good-quality vanilla bean ice cream is a fantastic contrast.

  • Cream: Simply drizzle over some pouring double cream for an extra touch of indulgence.

Storage Tips

  • This pudding is best served fresh and warm.

  • However, if you do have leftovers (a rare thing!), you can store them in an airtight container in the fridge for up to 3 days.

  • To Reheat: Gently warm individual portions in the microwave for 20-30 seconds, or put the whole pudding (covered) in a low oven (150°C) for about 10 minutes. Warm the remaining sauce separately in a small saucepan.

Easy Variations

  • Mini Puddings: Bake this mixture in a muffin tin (grease it well!) for individually-portioned sticky toffee puddings. Reduce the baking time to about 20-25 minutes.

  • Nutty Twist: Add 50g of chopped walnuts or pecans to the pudding batter before baking for a delicious crunch.

  • Chocolate Chip Sticky Toffee: For an extra treat, stir in 50g of milk or dark chocolate chips.

FAQs

  • Can I make the pudding ahead of time? Yes! You can bake the pudding a day ahead. Let it cool, cover it tightly, and store it in the fridge. Reheat as per the instructions above and make the sauce fresh.

  • Can I freeze sticky toffee pudding? You can freeze the baked pudding (once completely cool and well-wrapped) for up to 3 months. The sauce can also be frozen separately. Defrost thoroughly in the fridge before reheating.

  • Can I use light muscovado sugar for the pudding? While dark muscovado sugar gives the richest colour and flavour, light muscovado will work too – your pudding will just be a little lighter in colour and taste.

Don't panic if your date mixture looks a bit lumpy – those lovely little pockets of date are what make sticky toffee pudding so special! The important part is that they are well-mashed and incorporated.
