A Delicious Campfire-Inspired Bake

These S'mores Brownies take everything you love about the classic campfire treat and transform it into an easy bake that's perfect for sharing.

The rich chocolate brownie provides the perfect base, while the gooey marshmallows and crunchy biscuit topping give every bite that classic s'mores flavour. Best of all, you don't need a campfire to enjoy them – they're just as delicious fresh from the oven at home.

They're brilliant for summer parties, BBQs, picnics, sleepovers or packing into a lunchbox for a special treat. If you are heading off camping, bake them before you leave and enjoy them around the fire with a hot chocolate after a day of adventures.

Children love helping with this recipe too. They can sprinkle over the marshmallows, chocolate and biscuit pieces before the brownies go back into the oven, making it a simple bake the whole family can enjoy together.

Ingredients

For the brownies

  • 200g dark chocolate
  • 180g unsalted butter
  • 250g caster sugar
  • 3 large eggs
  • 100g plain flour
  • 30g cocoa powder
  • ½ tsp salt
  • 100g milk chocolate chips (optional)

For the topping

  • 150g mini marshmallows
  • 100g milk chocolate, roughly chopped
  • 6 digestive biscuits, roughly crushed

Method

  1. Preheat your oven to 180°C (160°C fan) and line a 20cm square baking tin with baking paper.
  2. Melt the dark chocolate and butter together, then leave to cool slightly.
  3. Whisk together the sugar and eggs until smooth before stirring in the melted chocolate mixture.
  4. Fold in the flour, cocoa powder and salt, then stir through the chocolate chips if using.
  5. Pour into the prepared tin and bake for 25–30 minutes, until the edges are set but the centre still has a slight wobble.
  6. Remove from the oven and immediately scatter over the marshmallows, chopped chocolate and crushed digestive biscuits.
  7. Return to the oven for 3–5 minutes until the marshmallows are golden and gooey.
  8. Leave to cool for at least 30 minutes before slicing into squares.

Top Tips

  • For extra gooey brownies, don't overbake them.
  • Add a drizzle of salted caramel for an extra indulgent treat.
  • Swap milk chocolate for white chocolate if you'd like a different twist.
  • Warm leftovers in the microwave for 10–15 seconds for that fresh-from-the-oven taste.
