Soft Millie’s-Style Cookie Recipe

Soft in the middle, crisp at the edges and packed with chocolatey goodness – these Millie’s-style cookies are everything we love about that cheeky shopping centre treat… but homemade and even better! This easy one-bowl recipe is perfect for baking with kids and customising with your favourite mix-ins – from rainbow buttons to mini marshmallows.
🛒 Ingredients (makes 12–14 cookies)

125g unsalted butter, softened

100g light brown sugar

75g caster sugar

1 large egg

1 tsp vanilla extract

225g self-raising flour

1/2 tsp salt

200g chocolate chips (milk, dark or white – or mix them!)
🍪 Method
1. Preheat & line your tray
Heat oven to 180°C (160°C fan) / Gas 4 and line 2 baking trays with parchment.
2. Cream the butter & sugar
In a large bowl, beat the butter with both sugars until pale and fluffy.
3. Add the egg & vanilla
Mix in the egg and vanilla extract until smooth.
4. Fold in dry ingredients
Add the flour and salt. Stir until a dough forms, then fold in the chocolate chips.
5. Shape your cookies
Scoop tablespoon-sized balls of dough onto the trays, leaving space to spread. Don’t flatten them – they’ll spread naturally in the oven.
6. Bake
Bake for 12–15 minutes until golden at the edges but still soft in the centre. They’ll firm up as they cool.
7. Cool (if you can wait!)
Let cookies cool on the tray for 10 minutes before transferring to a wire rack… or eat one warm – we won’t tell.
