When is Pancake Day 2024?
This year in the UK, Pancake Day is on Tuesday, 13th February 2024 (yes, that’s in half term for most of us). It’s connected to Easter and Lent (that’s why the date changes every year): Shrove Tuesday was the day when Christians would use up eggs and milk before beginning 40 days of fasting.
Did you know that the day before Pancake Day was known as Collop Monday – when people used up their last bits of meat?
Anyway, we’re accepting any excuse to make pancakes. The question is… which recipe wins?

Fluffy American Pancakes
200g self-raising flour
1 tsp baking powder
1 egg
300 ml milk
To cook: a knob of butter.
Sift the flour and baking powder into a bowl, then make a well in the middle. Crack in the egg and a little bit of the milk and whisk until smooth, then add the rest of the milk and whisk again.
Heat the pan, melt the butter and dollop in large spoonfuls of batter. When bubbles appear on the pancakes, flip and cook until golden.
HACK: Make extra batter and freeze it in ice-cube trays. Tip them directly into a hot pan for a super-fast breakfast! Watch this pancake hack here.
French Crepe-style Pancakes
110g plain flour
2 eggs
275ml semi-skimmed milk
To cook: a knob of butter.
Sift the flour and baking powder into a bowl, then crack in the egg and a bit of the milk and whisk until smooth. Add the rest of the milk and whisk again. (You can do this with a whisk attachment on a KitchenAid if you want.)
Heat the pan, melt the butter and lift the pan with one hand. With the other, use a ladle to remove about 2tbsp of batter. Tip it into the pan and swirl with your other hand so the batter quickly coats the surface.
Cook until bubbles appear, then flip and cook for a few more seconds.
