Marbled biscuits

🤎 Marbled Vanilla & Chocolate Biscuits

Makes: 18–20 biscuits

You'll Need

  • 250g unsalted butter, softened
  • 200g caster sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 500g plain flour
  • 30g cocoa powder

How to Make It

  1. Preheat the oven to 180°C (160°C fan) and line two baking trays.
  2. Beat the butter and sugar together until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Mix in the flour until a soft dough forms.
  5. Divide the dough into two equal pieces.
  6. Leave one half as your vanilla dough.
  7. Knead the cocoa powder into the other half until the colour is even. If the chocolate dough feels a little dry, add 1 teaspoon of milk.
  8. Roll each dough into a long sausage of a similar size.
  9. Twist the two sausages together, then gently roll into one smooth log.
  10. Chill for 20–30 minutes until firm.
  11. Slice into 5–8mm thick rounds and place onto the prepared baking trays.
  12. Bake for 10–12 minutes, until the edges are just beginning to turn golden.
  13. Leave to cool on the tray for 5 minutes before transferring to a wire rack.

Top Tip: For a more dramatic marbled effect, flatten each dough into a rectangle, stack them together, then roll into a log before slicing. Every biscuit will have a unique swirl! 🍪
