Easy Healthy Flapjack Recipe

There’s something so comforting about a golden, chewy flapjack — especially when you know it’s made with simple, wholesome ingredients. Perfect for lunchboxes, after-school snacks or a little treat with your cuppa, these healthy flapjacks are a real winner for the whole family!
Ingredients

200g rolled oats

100g unsalted butter or coconut oil

100g honey or maple syrup

75g dried fruit (like raisins, cranberries or chopped apricots)

50g seeds (sunflower, pumpkin or chia work wonderfully)

1 ripe banana, mashed

1 tsp vanilla extract

A pinch of salt
Method

Preheat your oven to 160°C (fan) or 180°C (conventional) and line a small square baking tin (about 20cm) with baking paper.

In a small saucepan, gently melt the butter and honey (or maple syrup) over a low heat.

Remove from the heat and stir in the mashed banana and vanilla extract.

In a large bowl, mix the oats, dried fruit, seeds and salt.

Pour the wet mixture over the dry ingredients and mix thoroughly until everything is well coated.

Spoon the mixture into the lined tin and press down firmly with the back of a spoon to level it out.

Bake for 20–25 minutes, or until the edges are golden and the top is just firm to the touch.

Allow to cool completely in the tin before cutting into squares or bars.
